The Bourgogne Rouge Hautes Cotes de Beaune from Domaine Cauvard represents an interpretation of Burgundy's Pinot Noir with a fruity and smooth style. Domaine Cauvard is part of the Vignerons indépendants de France, an association founded in 1978 with the aim of assisting and promoting the work of independent winemakers throughout France. Among the cornerstones of the association are respect for the terroir, the preservation of local winemaking traditions, and the independent management of the entire production chain.
The Bourgogne Domaine Cauvard Hautes Cotes de Beaune Rouge is made from 100% Pinot Noir grapes grown using sustainable agricultural practices on predominantly clay-limestone soils. After manual harvesting, the grapes undergo red winemaking with controlled-temperature alcoholic fermentation in raw cement tanks, with several days of skin contact. Once fermentation is complete, the wine is transferred to French oak barrels, where it matures for several months until the final bottling, which is done without filtration.
